Grilled Veggie & Hummus Wraps

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 red bell pepper, sliced

1 zucchini, sliced into half-moons

1 yellow squash, sliced into half-moons

1 small red onion, thinly sliced

1 cup spinach leaves

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Crumbled feta cheese (optional, for garnish)

Fresh parsley or cilantro, chopped (optional, for garnish)

Instructions
 

Preheat the Grill: Preheat your grill or grill pan over medium-high heat.

    Prepare the Veggies: In a large bowl, combine the sliced bell pepper, zucchini, yellow squash, and red onion. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss until the vegetables are evenly coated.

      Grill the Vegetables: Place the seasoned veggies on the grill. Cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from the grill and set aside.

        Assemble the Wraps: Lay each tortilla flat on a clean surface. Spread a generous layer of hummus over each tortilla, leaving a small border around the edges.

          Add the Veggies: On top of the hummus, layer a handful of grilled veggies and a small handful of fresh spinach leaves.

            Roll the Wraps: Tightly roll each tortilla from one end to the other, folding in the sides as you go to secure the filling.

              Grill the Wraps (optional): For extra crunch, you can return the wraps to the grill for 2-3 minutes on each side, just until golden and crispy.

                Serve: Cut each wrap in half, and if desired, sprinkle with crumbled feta cheese and fresh parsley or cilantro. Serve with extra hummus for dipping.
