Grilled Teriyaki Chicken Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1/2 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

2 tbsp rice vinegar

2 tbsp sesame oil

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon water

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Reserve 1/4 cup of the marinade for later use. Add the chicken cubes to the bowl and mix to coat well. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

    Prepare the Vegetables: While the chicken is marinating, prepare your skewers. If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill. Cut the bell peppers and onion into 1-inch pieces and set aside.

      Make the Teriyaki Sauce: In a small saucepan, combine the reserved marinade with cornstarch and water. Bring to a gentle simmer over medium heat, stirring until the sauce thickens, about 5 minutes. Remove from heat and set aside.

        Assemble the Skewers: Once the chicken has marinated, thread the marinated chicken onto the skewers, alternating with the bell pepper and onion pieces for added color and flavor.

          Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Make sure it's well-oiled to prevent sticking.

            Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F/75°C) and has nice grill marks.

              Glaze and Finish: During the last few minutes of grilling, brush the skewers with the thickened teriyaki sauce to add an extra layer of flavor.

                Serve: Once cooked, remove the skewers from the grill, and let them rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving.
