Grilled Shrimp & Corn Tacos

Ingredients
  

1 pound large shrimp, peeled and deveined

2 ears of fresh corn, kernels removed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 avocado, sliced

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup crema (or sour cream)

Optional: Hot sauce for extra heat

Instructions
 

Marinate the Shrimp: In a bowl, combine the peeled shrimp, olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Toss to coat the shrimp evenly. Let the mixture marinate for at least 15 minutes while you prepare the corn and other ingredients.

    Grill the Corn: Preheat your grill or a grill pan over medium-high heat. Add the corn kernels and grill for about 5-7 minutes, stirring occasionally until they are lightly charred and tender. Remove from heat and set aside.

      Grill the Shrimp: Once the corn is done, thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes before grilling). Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp is pink and opaque. Remove from the grill.

        Warm the Tortillas: While the shrimp is grilling, warm the corn tortillas either on the grill for about 1 minute each side or in a skillet over medium heat until pliable.

          Assemble the Tacos: On each warm tortilla, layer some grilled shrimp, grilled corn, shredded red cabbage, and avocado slices. Drizzle with lime juice and add a dollop of crema on top. Sprinkle with fresh cilantro and add hot sauce if desired.
