1 ripe avocado, diced

1 cup corn (fresh, frozen, or canned)

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt (or sour cream)

2 tablespoons mayonnaise

3 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

Cooked rice (white, brown, or cauliflower rice)

Fresh greens (optional, like arugula or spinach)

Lime wedges for serving

Prepare the Shrimp Marinade: In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and pepper. Add the shrimp and toss to coat them thoroughly. Cover and marinate in the refrigerator for at least 15-30 minutes.
