4 salmon fillets (about 6 oz each)

1 tablespoon lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Marinate the Salmon: In a small bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow the salmon to marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for enhanced flavor.
