Ingredients

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt and pepper, to taste

4 cups arugula or mixed greens

8 ounces burrata cheese

¼ cup sliced almonds, toasted

¼ cup fresh basil leaves, roughly torn

2 tablespoons balsamic glaze

1 tablespoon honey (optional)

Instructions

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, ensure the grates are clean and lightly oiled to prevent sticking.

Prepare the Peaches: Toss the peach halves with olive oil, salt, and pepper. Make sure they are evenly coated for a great flavor.

Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 3-4 minutes, or until you see nice grill marks and the peaches are tender but not mushy. Remove from the grill and let them cool slightly.

Assemble the Salad: In a large bowl, combine the arugula (or mixed greens) and torn basil leaves. Gently toss them together to mix.

Add Burrata: Tear the burrata cheese into pieces and place them strategically over the salad. The creamy nature of the burrata will contrast beautifully with the grilled peaches.

Top with Peaches and Almonds: Slice the grilled peaches into wedges and scatter them over the salad. Sprinkle the toasted almonds for a delightful crunch.

Finish with Glaze and Honey: Drizzle balsamic glaze over the entire salad, and if desired, add a touch of honey for an extra layer of sweetness.

Serve: Serve immediately while the peaches are warm and the burrata is cold for the best experience.
