Grilled Peach and Burrata Salad

4 ripe peaches, halved and pitted

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 cups mixed greens (arugula, spinach, and/or baby kale)

8 oz burrata cheese

1/4 cup toasted walnuts, roughly chopped

2 tablespoons fresh basil leaves, torn

1 tablespoon balsamic glaze

Optional: Extra virgin olive oil for drizzling

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C).

    Prepare the Peaches: Brush the halved peaches with olive oil and season with a pinch of salt and pepper.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Flip and grill the other side for another 2-3 minutes. Remove from the grill and let cool slightly.
