Grilled Fish Tostadas

1 lb firm white fish (like tilapia or mahi-mahi)

2 tablespoons olive oil

Juice of 2 limes

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

8 corn tostada shells

1 cup shredded red cabbage

1 avocado, sliced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt

1 garlic clove, minced

Hot sauce (optional)

Instructions
 

Marinate the Fish: In a bowl, combine olive oil, lime juice, chili powder, cumin, salt, and pepper. Whisk together until well combined. Add the fish fillets to the marinade, ensuring they’re fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Tostada Shells: Preheat a grill or grill pan over medium-high heat. Place the tostada shells on the grill for about 1-2 minutes on each side until they’re warm and slightly crispy. Remove from the grill and set aside.

      Grill the Fish: Increase the grill heat to high. Remove the fish from the marinade and place it on the grill. Grill for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks. Remove from the grill and let it rest for a few minutes before flaking it into bite-sized pieces.

        Prepare the Toppings: In a small bowl, mix the sour cream (or Greek yogurt) with the minced garlic, a pinch of salt, and juice from one lime to create a quick garlic lime sauce. Set aside.

          Assemble the Tostadas: On each tostada shell, layer the grilled fish, shredded red cabbage, diced tomatoes, and avocado slices. Drizzle with the garlic lime sauce and finish with a sprinkle of chopped cilantro. Add hot sauce if desired for extra heat.
