4 ears of fresh corn, husked and cleaned

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cucumber, diced

1 cup crumbled feta cheese

1/4 cup fresh basil, chopped

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Salt and pepper to taste

Lime wedges for serving

Prepare the Corn: Preheat the grill to medium-high heat. Grill the ears of corn for about 10-15 minutes, turning occasionally, until charred and tender. Once cooked, set aside to cool slightly.

    Cut the Corn Kernels: Once the corn is cool enough to handle, carefully cut the kernels off the cob using a sharp knife and place them in a large mixing bowl.

      Mix in Fresh Ingredients: Add the halved cherry tomatoes, diced red bell pepper, chopped red onion, diced cucumber, and fresh basil to the bowl with the corn.

        Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper. Adjust the seasoning to taste.
