Grilled Chicken & Watermelon Salad

2 boneless, skinless chicken breasts

4 cups watermelon, diced into bite-sized pieces

4 cups mixed greens (arugula, spinach, and romaine)

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon paprika

1 teaspoon garlic powder

Juice of 1 lime

Instructions
 

Marinate the Chicken: In a small bowl, mix olive oil, lime juice, garlic powder, paprika, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: Heat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill, let it rest for a few minutes, then slice it into strips.

        Prepare the Salad Base: In a large mixing bowl, combine the mixed greens, diced watermelon, crumbled feta, sliced red onion, and chopped mint.

          Assemble the Salad: Add the grilled chicken strips on top of the salad. Drizzle with balsamic glaze and toss gently to combine, ensuring everything is well coated.

            Serve: Plate the salad and if desired, add more feta and mint leaves on top for garnish. Serve immediately and enjoy the refreshing flavors!
