Grilled Chicken Pineapple Bowls

2 large ripe pineapples, halved and cored

2 boneless, skinless chicken breasts (about 1 pound)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1 red bell pepper, diced

1 cup cooked quinoa (or rice, if preferred)

½ cup fresh cilantro, chopped

1 lime, juiced

½ cup shredded coconut (optional for garnish)

Optional toppings: sliced jalapeños, chopped green onions, or avocado

Instructions
 

Prepare the Chicken Marinade: In a small bowl, mix the olive oil, garlic powder, paprika, onion powder, oregano, salt, and pepper. Rub this mixture over both sides of the chicken breasts. Let marinate for at least 30 minutes (or overnight for deeper flavor).

    Preheat the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C).

      Grill the Chicken: Place the marinated chicken breasts on the grill. Grill for about 6-7 minutes on each side, or until internal temperature reaches 165°F (75°C) and juices run clear. Remove from grill and let it rest for a few minutes before slicing.

        Prepare the Pineapple Halves: While the chicken is resting, place the cored pineapple halves on the grill, cut side down, and grill for about 5-7 minutes until they have grill marks and are slightly softened. Remove from the grill and let cool slightly.

          Prepare the Filling: In a mixing bowl, combine the cooked quinoa (or rice), diced red bell pepper, chopped cilantro, and lime juice. Mix well and season with salt and pepper to taste.
