For the Buffalo Chicken:

2 large boneless, skinless chicken breasts

1/2 cup buffalo sauce (plus extra for drizzling)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Salad:

6 cups mixed greens (romaine, spinach, arugula)

1 cup cherry tomatoes, halved

1/2 cup cucumber, sliced

1/2 cup celery, chopped

1/4 cup red onion, thinly sliced

1/2 cup crumbled blue cheese (or feta for a twist)

1 avocado, sliced

1/4 cup ranch dressing (or blue cheese dressing)

For Garnish:

Fresh parsley, chopped

Extra buffalo sauce, for drizzling

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken breasts with olive oil, buffalo sauce, garlic powder, smoked paprika, salt, and pepper. Allow to marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Prepare the Grill: Preheat your grill to medium-high heat. Oil the grill grates to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Brush additional buffalo sauce on the chicken during the last minute of cooking for added flavor. Once cooked, let the chicken rest for 5 minutes before slicing.

        Assemble the Salad: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, celery, red onion, and avocado. Toss lightly to mix.
