Resting the chicken after grilling is a crucial step that many home cooks often overlook. Allowing the chicken to rest for about 5 to 10 minutes after cooking helps redistribute the juices throughout the meat. This means when you finally slice it, the juices stay locked inside rather than spilling out onto your cutting board. This results in a more flavorful and moist chicken that will elevate your BBQ chicken pizza to new heights. So, be patient and give your chicken the time it needs to rest before cutting it into bite-sized pieces.

Ingredients

1 lb boneless, skinless chicken breast

1 cup BBQ sauce (choose your favorite brand)

1 pre-made pizza dough (or homemade if preferred)

1 cup shredded mozzarella cheese

½ cup red onion, thinly sliced

½ cup fresh cilantro, chopped

1 cup corn kernels (canned or frozen)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, mix the boneless chicken breasts with ½ cup of BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Let it marinate for at least 30 minutes in the refrigerator.

Grill the Chicken: Preheat your grill to medium-high heat. Once hot, grill the marinated chicken for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes before slicing it into bite-sized pieces.

Prepare the Pizza Dough: While the chicken is resting, prepare your pizza dough on a floured surface. Roll it out into your desired size and shape, keeping it about ¼-inch thick. Transfer the dough to a pizza stone or baking sheet lined with parchment paper.

Add BBQ Sauce: Spread an even layer of the remaining BBQ sauce over the dough, leaving a small border around the edge.

Layer the Toppings: Evenly distribute the grilled chicken pieces over the sauce. Next, sprinkle the corn kernels, sliced red onion, and shredded mozzarella cheese on top.

Grill the Pizza: Preheat your grill to medium heat again. Transfer the pizza onto the grill and close the lid. Grill for about 10-12 minutes, or until the cheese is melted and bubbly, and the crust is golden and crispy.

Finish with Cilantro: Once the pizza is cooked, remove it from the grill and let it cool for a couple of minutes. Afterward, sprinkle chopped fresh cilantro over the pizza for a burst of freshness.

Slice and Serve: Cut the pizza into slices and serve hot with extra BBQ sauce on the side for dipping, if desired. Enjoy your homemade grilled BBQ chicken pizza!
