Green Chili Chicken Pinwheels

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1/2 cup green chili peppers, diced (canned or fresh)

1 cup shredded cheddar cheese

1/2 cup fresh cilantro, chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

Salt and pepper to taste

4 large flour tortillas

1/4 cup olive oil (for brushing)

Optional: sliced jalapeños for extra heat

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, softened cream cheese, diced green chili peppers, shredded cheddar cheese, and chopped cilantro. Add garlic powder, onion powder, cumin, salt, and pepper. Mix everything together until well incorporated.

    Spread the Mixture: Lay one flour tortilla flat on a clean surface. Evenly spread about 1/4 of the chicken mixture across the entire surface of the tortilla, leaving about half an inch around the edges.

      Roll the Tortilla: Starting at one end, carefully roll the tortilla tightly around the filling. Continue rolling until you reach the end. Repeat this process for the remaining tortillas and filling.

        Chill the Pinwheels: Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes. This helps to firm up the tortillas, making it easier to slice.

          Preheat the Oven: While the pinwheels are chilling, preheat your oven to 375°F (190°C).

            Slice the Pinwheels: Remove the plastic wrap from the chilled tortillas and slice each roll into 1-inch thick pinwheels.

              Bake the Pinwheels: Arrange the pinwheels on a baking sheet lined with parchment paper. Brush the tops with olive oil for extra flavor and a nice golden color. Bake in the preheated oven for about 10-15 minutes or until the edges are golden and slightly crispy.
