2 cans (15 oz each) black beans, drained and rinsed

1 cup green chili salsa (mild or medium, depending on your heat preference)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, sliced

1/2 cup crumbled feta cheese (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Stir in the drained black beans, green chili salsa, cumin, smoked paprika, salt, and pepper. Mix well and cook for approximately 5-7 minutes, or until heated through and the flavors meld together. If the mixture is too thick, you can add a splash of water to loosen it.

      While the black bean mixture simmers, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable and slightly toasted.

        To assemble the tacos, place a generous portion of the black bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, avocado slices, and crumbled feta cheese, if using.

          Serve the tacos immediately, garnished with fresh cilantro and lime wedges on the side for squeezing over the top.
