1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil, plus more for drizzling

2 tablespoons fresh lemon juice

1 garlic clove, minced

1 teaspoon ground cumin

Salt to taste

1/4 cup water (or more for desired consistency)

1/2 cup diced cucumber

1/2 cup diced tomatoes

1/4 cup kalamata olives, pitted and chopped

1/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

A pinch of smoked paprika (for garnish)

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.

    Process until creamy, scraping down the sides as necessary.

      Gradually add water, one tablespoon at a time, until the hummus reaches your desired consistency. Taste and adjust seasoning as needed.

        Transfer the hummus to a serving platter or bowl, smoothing the top with the back of a spoon to create a slight well in the center.
