For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

¼ cup olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

½ tsp paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

½ cucumber, grated and drained

2 cloves garlic, minced

1 tbsp fresh dill, chopped

1 tbsp olive oil

1 tbsp lemon juice

Salt to taste

For the Bowls:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and sliced

¼ cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Add the chicken pieces and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

    Prepare the Tzatziki Sauce: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, and salt. Mix well and adjust seasoning to taste. Refrigerate until ready to serve.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Thread chicken pieces onto skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning). Grill the chicken skewers for about 10-15 minutes, turning occasionally, until cooked through and nicely charred.

        Assemble the Bowls: In serving bowls, start with a base of cooked quinoa or rice. Layer with cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
