For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

4 cloves garlic, minced

2 tablespoons olive oil

Juice of 1 lemon

2 teaspoons dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1/2 lemon

Salt to taste

For Serving:

Pita bread or wraps

Sliced tomatoes

Sliced red onion

Fresh lettuce or baby spinach

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine minced garlic, olive oil, lemon juice, oregano, cumin, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they're well-coated. Cover and marinate for at least 1 hour in the refrigerator, preferably overnight for maximum flavor.

    Prepare the Tzatziki Sauce: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and a pinch of salt. Mix well and refrigerate for at least 30 minutes to let the flavors meld.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken thighs from the marinade and grill them for 5-7 minutes on each side until fully cooked and slightly charred. The internal temperature should reach 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing it into strips.

        Assemble the Gyros: Warm the pita bread or wraps in a pan for a few seconds on each side. On each pita, layer sliced chicken, fresh tomatoes, red onion, lettuce or spinach, and a generous dollop of tzatziki sauce. Sprinkle with crumbled feta cheese if desired.

          Serve and Enjoy: Fold the pita around the filling, wrap it in parchment paper for easy handling, and serve immediately. Pair with extra tzatziki on the side and enjoy a taste of Greece at home!
