Ingredients

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

1 tablespoon ground turmeric

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Optional: A sprinkle of red chili flakes for heat

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Cauliflower: Rinse the cauliflower florets under cold water and pat them dry with a kitchen towel. Make sure they are thoroughly dry to ensure the spices adhere well and the cauliflower roasts properly.

Mix the Spice Blend: In a large mixing bowl, whisk together the olive oil, turmeric, cumin, garlic powder, onion powder, smoked paprika, salt, black pepper, and the juice of one lemon to create a flavorful marinade.

Coat the Cauliflower: Add the cauliflower florets to the bowl and toss them in the spice mixture until well-coated. Ensure all florets are evenly coated for the best flavor.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the cauliflower florets out in a single layer, ensuring there is space between them for even roasting.

Roast the Cauliflower: Place the baking sheet in the preheated oven and roast the cauliflower for about 25–30 minutes, or until the florets are golden brown and tender. Halfway through roasting, give them a gentle stir to ensure they brown evenly.

Add Finishing Touches: Once roasted, remove from the oven and let cool for a few minutes. Spritz a little more lemon juice on top if desired, and sprinkle with fresh parsley and optional red chili flakes for an extra kick.

Serve: Serve warm as a side dish, or you can enjoy it on salads, grain bowls, or as a flavorful addition to wraps.
