Golden Turmeric Chicken Rice Soup

1 lb (450g) boneless, skinless chicken thighs

1 cup jasmine rice, rinsed and drained

6 cups low-sodium chicken broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 tbsp fresh ginger, minced

2 large carrots, diced

1 stalk celery, diced

1 tbsp ground turmeric

1 tsp ground cumin

1/2 tsp black pepper

1/2 tsp salt (or to taste)

1 can (14 oz) coconut milk

2 cups fresh spinach (or kale), roughly chopped

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Olive oil for sautéing

Instructions
 

Sauté the Chicken: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chicken thighs and sear for about 5-7 minutes until browned on both sides. Remove the chicken from the pot and set it aside.

    Cook the Vegetables: In the same pot, add the chopped onion, garlic, ginger, carrots, and celery. Sauté for about 5-6 minutes, or until the vegetables have softened.

      Add Spices and Rice: Sprinkle in the ground turmeric, cumin, black pepper, and salt, stirring to coat the vegetables. Add the rinsed jasmine rice and stir for another 2 minutes, allowing the rice to absorb some of the flavors.

        Combine Liquid Ingredients: Pour in the low-sodium chicken broth and bring the mixture to a boil. Reduce the heat to a simmer, then return the seared chicken thighs to the pot.

          Simmer the Soup: Cover the pot and let the soup simmer for about 20 minutes, or until the chicken is fully cooked and the rice is tender.

            Finish the Soup: After 20 minutes, remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the soup along with the coconut milk and chopped spinach. Stir well and simmer for another 5 minutes.

              Add Lime Juice: Just before serving, stir in the juice of one lime to brighten the flavors.

                Serve and Garnish: Ladle the soup into bowls, garnish with fresh cilantro, and enjoy this warm, comforting bowl of goodness!
