1 large head of cauliflower

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (panko recommended for extra crunch)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Remove the leaves and stem from the cauliflower. Place it stem side down on a cutting board. Using a sharp knife, slice the cauliflower into 3/4-inch thick steaks. You should get about 3-4 good-sized steaks; the remaining florets can be set aside for another recipe or roasted along with the steaks.

      Make the Coating: In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until the ingredients are evenly distributed.

        Coat the Cauliflower Steaks: Brush both sides of the cauliflower steaks with olive oil. Then, generously press the Parmesan breadcrumb mixture onto both sides of each steak, ensuring a good coating sticks to the cauliflower.

          Roast the Steaks: Place the coated cauliflower steaks on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and fork-tender.
