3 large russet potatoes, peeled and cubed

1 medium onion, diced

1 red bell pepper, diced

2 green onions, chopped (for garnish)

2 tbsp Cajun seasoning

1 tsp smoked paprika

1/2 tsp black pepper

2 tbsp olive oil

Salt, to taste

    Prepare the Chicken Bites: In a shallow dish, mix together the flour, paprika, garlic powder, remaining Cajun seasoning, salt, and pepper.
