4 cups fresh spinach, roughly chopped

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 lemon, juiced and zested

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving)

Prepare the Shrimp: In a medium bowl, season the shrimp with salt, pepper, and half of the lemon juice. Set aside to marinate for about 10 minutes.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, but do not let the garlic brown.

      Cook the Shrimp: Add the marinated shrimp to the skillet. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté the Spinach: In the same skillet, add the chopped spinach. Stir and cook for about 2 minutes until the spinach is wilted.

          Combine Ingredients: Return the cooked shrimp to the skillet and mix well with the spinach. Add the lemon zest and the remaining lemon juice, then adjust salt and pepper to your liking. Stir everything together for another minute to let the flavors meld.
