8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 cups fresh spinach

1/2 cup cherry tomatoes, halved

1/4 cup extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

Juice of 1 lemon

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine (or fettuccine) and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for about 2-3 minutes until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

      Garlic and Spinach: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant. Then, add the fresh spinach and cherry tomatoes. Cook for about 2-3 minutes until the spinach has wilted and the tomatoes are softened.

        Combine Everything: Return the cooked shrimp to the skillet. Add the drained pasta to the skillet along with the lemon juice and reserved pasta water. Toss everything together to combine. Taste and adjust the seasoning with additional salt, pepper, or red pepper flakes as desired.

          Serve: Serve the pasta in bowls, garnished with grated Parmesan cheese and chopped parsley. You can add more olive oil or lemon juice for a finishing touch, if preferred.
