Ingredients

2 large sweet potatoes, scrubbed and cut into wedges

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato wedges with olive oil, making sure each wedge is well-coated.

Season the Wedges: Add minced garlic, smoked paprika, oregano, salt, and black pepper to the bowl. Toss until the sweet potatoes are evenly coated with the mixture.

Add Parmesan: Sprinkle the grated Parmesan cheese over the seasoned wedges and toss lightly until the cheese sticks to the sweet potatoes.

Arrange on Baking Sheet: Lay the sweet potato wedges out in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for even roasting.

Bake: Roast in the preheated oven for 25-30 minutes, flipping the wedges halfway through the cooking time until they are golden brown and crisp on the outside.

Garnish and Serve: Once done, remove from the oven and let them sit for a couple of minutes. Garnish with freshly chopped parsley before serving.
