4 cod fillets (6 oz each)

1 cup cooked quinoa

1/2 cup Panko breadcrumbs

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Oven and Fish: Preheat your oven to 400°F (200°C). Pat the cod fillets dry with paper towels and season both sides with salt, pepper, and paprika.

    Make the Garlic Lemon Mixture: In a bowl, combine minced garlic, lemon juice, lemon zest, oregano, olive oil, and a pinch of salt and pepper. Mix until well combined.

      Coat the Cod: Place the seasoned cod fillets on a baking tray lined with parchment paper. Spoon the garlic lemon mixture evenly over the tops of each fillet.

        Prepare the Quinoa Crust: In another bowl, mix together the cooked quinoa, Panko breadcrumbs, and grated Parmesan cheese. Stir until fully combined. This mixture will create a crunchy topping for your cod.

          Add the Crust: Gently press the quinoa mixture onto the top of each cod fillet, ensuring an even coating. Press down slightly to help it stick.
