4 large russet potatoes

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

1/2 teaspoon sea salt (adjust to taste)

1/4 teaspoon black pepper

1/2 cup shredded Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat dry with a towel. Poke several holes in each potato using a fork to allow steam to escape.

      Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender. Once done, remove them from the oven and let them cool for a few minutes.

        Cut and Scoop: When the potatoes are cool enough to handle, cut them in half lengthwise. Carefully scoop out the inside flesh of the potatoes, leaving about 1/4 inch of potato intact attached to the skin for sturdiness. (You can save the scooped-out potato for another recipe, like mashed potatoes!)

          Season the Skins: In a mixing bowl, combine the olive oil, garlic powder, onion powder, dried thyme, dried rosemary, smoked paprika, sea salt, and black pepper. Brush this mixture generously all over the potato skins.

            Roast the Skins: Place the seasoned potato skins skin-side up on a baking sheet. Roast in the oven for 15-20 minutes, or until they are crispy and golden.

              Add Cheese: Once the skins are crispy, sprinkle the shredded Parmesan cheese evenly across the skins and return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
