Garlic Herb Grilled Flatbread

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon sugar

1 teaspoon salt

¾ cup warm water (about 110°F or 43°C)

2 tablespoons olive oil (plus extra for brushing)

2 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

½ teaspoon black pepper

Optional: sea salt flakes for finishing

Instructions
 

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Stir to mix. Gradually add the warm water and olive oil, mixing until a dough begins to form.

    Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic. If the dough is sticky, you can sprinkle a little more flour as needed.

      Let it Rise: Place the dough in a greased bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Prepare Herb Mixture: While the dough is rising, mix the minced garlic, chopped parsley, rosemary, thyme, and black pepper in a small bowl. Set aside.

          Shape the Flatbreads: Once the dough has risen, punch it down to release the air. Divide the dough into 4 equal portions and shape each piece into a ball. Roll each ball out on a floured surface into a flat, oval shape about ¼ inch thick.

            Preheat the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C).

              Brush and Grill: Brush one side of each flatbread with olive oil, and sprinkle half of the garlic herb mixture on top. Place the flatbread on the grill, oiled side down. Grill for about 2-3 minutes, or until you see grill marks.

                Flip and Finish: Brush the exposed side with olive oil and sprinkle the remaining garlic herb mixture. Flip the flatbread and grill for an additional 2-3 minutes, until golden brown and cooked through.

                  Serve: Remove the flatbreads from the grill and let them cool for a minute. Optionally, sprinkle with sea salt flakes before serving. Slice and enjoy warm as a side or snack!
