Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

Optional: 1/4 teaspoon crushed red pepper flakes (for a kick)

Instructions

Prepare the Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas. Gently mash a few chickpeas with a fork to create a varied texture within the salad.

Chop the Vegetables: Add the halved cherry tomatoes, diced cucumber, diced bell pepper, and finely chopped red onion to the chickpeas in the bowl.

Mix Herbs and Garlic: Incorporate the chopped parsley and cilantro into the mixture. Then, add the minced garlic for that delicious aromatic flavor.

Create the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, red wine vinegar, dried oregano, salt, black pepper, and crushed red pepper flakes (if using) until well combined.

Combine: Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly. Taste and adjust seasoning if necessary.

Chill: For best flavor, cover the salad and let it sit in the refrigerator for at least 20 minutes to allow the flavors to meld.

Serve: Toss the salad again before serving and enjoy as a refreshing main dish or a side!
