Ingredients

12 oz rigatoni pasta

1 lb ribeye steak (or your preferred cut)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, minced (or ½ teaspoon dried rosemary)

½ teaspoon red pepper flakes (optional for heat)

1 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Prepare the Steak: While the pasta is cooking, season the ribeye steak generously with salt and black pepper on both sides. Heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once the butter is sizzling, add the steak to the pan. Cook for 4-5 minutes on each side for medium-rare, depending on thickness, or until it reaches your desired doneness. Remove the steak from the skillet and let it rest for 5-10 minutes before slicing it into thin strips.

Make Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic, thyme, rosemary, and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, but not browned.

Combine Pasta and Sauce: Add the cooked rigatoni to the skillet with the garlic butter. Toss well to coat the pasta in the sauce. If the mixture seems too dry, add reserved pasta water a bit at a time until desired consistency is reached.

Add Cheese and Steak: Stir in the grated Parmesan cheese until melted and creamy. Add the sliced steak to the pasta, mixing gently to combine. Season with additional salt and pepper to taste.

Serve: Divide the Garlic Butter Steak Parmesan Rigatoni into bowls and garnish with extra Parmesan cheese and chopped parsley for a fresh finish. Enjoy your delicious meal!
