Ingredients

1 lb sirloin steak, cut into 1-inch cubes

Salt and black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, minced (or 1/2 teaspoon dried rosemary)

Fresh parsley, chopped (for garnish)

Optional: a pinch of red pepper flakes for heat

Instructions

Prepare the Steak: Pat the sirloin cubes dry with paper towels. This helps to create a beautiful sear. Season the steak generously with salt and black pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak Bites: Add the steak cubes to the skillet in a single layer. Avoid overcrowding; cook them in batches if necessary. Sear for about 2-3 minutes on each side, or until they reach your desired level of doneness (medium-rare is recommended). Remove the steak bites from the skillet and set them aside.

Make the Garlic Butter: In the same skillet, reduce the heat to medium. Add the butter, allowing it to melt. Once melted, add the minced garlic, thyme, and rosemary. Sauté for about 1-2 minutes, until the garlic is fragrant and golden, but not burnt.

Combine: Return the steak bites to the skillet. Toss them in the garlic butter mixture, cooking for an additional minute to reheat and coat the bites in the delicious garlic butter sauce.

Serve: Remove from heat. Garnish with freshly chopped parsley and a sprinkle of red pepper flakes for a hint of heat if desired. Serve immediately, either on their own or with toothpicks for easy snacking!
