500g fresh mushrooms (such as cremini, button, or shiitake), sliced

3 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper, to taste

4 slices of rustic bread or sourdough

Zest of 1 lemon

Optional: Grated Parmesan cheese for topping

Prepare the Ingredients: Clean the mushrooms with a damp paper towel and slice them evenly. Mince the garlic and chop the parsley.

    Cook the Mushrooms: In a large skillet over medium heat, add the olive oil and 1 tablespoon of butter. Once melted and shimmering, add the sliced mushrooms. Sauté until they release their moisture and turn golden brown, about 5-7 minutes. Stir occasionally.

      Add Garlic and Seasoning: Lower the heat to medium-low. Add the minced garlic, thyme, salt, and pepper to the mushrooms. Cook for an additional 2-3 minutes until the garlic is fragrant but not burnt.

        Finish with Butter: Remove the skillet from the heat and stir in the remaining butter. Mix well until the mushrooms are coated in the buttery garlic sauce. Stir in the lemon zest and fresh parsley for a burst of flavor.
