4 cups all-purpose flour

2 teaspoons instant yeast

1 teaspoon sugar

1 teaspoon salt

1 ½ cups warm water (110°F)

⅓ cup olive oil (plus more for brushing)

1 tablespoon minced garlic

½ cup unsalted butter, melted

½ cup fresh parsley, finely chopped

1 teaspoon dried oregano

1 teaspoon grated Parmesan cheese (optional)

Salt and pepper to taste

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Pour in the warm water and olive oil. Mix until a shaggy dough forms.

    Knead the Dough: Transfer the dough to a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic. Form it into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm place for 1 hour, or until doubled in size.

      Prepare the Garlic Butter: While the dough is rising, in a small bowl, mix the melted butter, minced garlic, chopped parsley, oregano, and grated Parmesan (if using). Set aside.

        Shape the Rolls: Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Divide the dough into equal portions (about 12-15 pieces). Roll each piece into a ball and place them on a greased baking tray, leaving some space between each roll.

          Second Rise: Cover the shaped rolls with a damp cloth and let them rise again for about 30 minutes, or until they puff up.

            Preheat the Oven: Preheat your oven to 375°F (190°C) during the second rise.

              Brush with Garlic Butter: Once the rolls have risen, use a pastry brush to generously coat the tops of the rolls with the garlic butter mixture. Reserve some of the butter for later.

                Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown on top.

                  Final Touch: Remove the rolls from the oven and immediately brush them with any remaining garlic butter while they are warm. Sprinkle with extra salt and pepper if desired.
