Ingredients

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and diced

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

½ cup granola (choose your favorite mix)

¼ cup mini chocolate chips (optional)

1 tablespoon lemon juice

Pinch of salt

Instructions

Prepare Strawberries: In a medium bowl, mix the diced strawberries with lemon juice and a pinch of salt. This helps to enhance their flavor. Set aside for about 5 minutes to macerate.

Combine Yogurt Base: In a large bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until completely smooth and the sweetener is fully integrated.

Mix in Strawberries: Gently fold the prepared strawberries into the yogurt mixture, ensuring they are evenly distributed throughout.

Incorporate Granola: Add the granola and mini chocolate chips (if using) to the yogurt mixture. Give a gentle stir to combine everything without crushing the granola too much.

Shape Discs: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, drop mounds of the yogurt mixture onto the parchment to form discs, about 2-3 inches in diameter.

Freeze: Place the baking sheet in the freezer and freeze for at least 4 hours or until the discs are completely firm.

Serve and Store: Once frozen, carefully peel the discs off the parchment and store them in an airtight container in the freezer. Serve as a cool treat straight from frozen when needed.
