2 cups unsweetened Greek yogurt

1 cup pitted Medjool dates, finely chopped

1 cup shelled pistachios, roughly chopped

1/4 cup honey or maple syrup (optional for sweetness)

1 teaspoon vanilla extract

Pinch of sea salt

1/2 teaspoon cardamom powder (optional for a warm spice note)

Prep Dates and Nuts: Start by finely chopping the pitted Medjool dates and roughly chopping the shelled pistachios. This will ensure that each bite has a lovely mix of textures. Set aside.

    Mix the Base: In a large mixing bowl, combine the unsweetened Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. If you’re using cardamom, add that in too. Mix well until you achieve a smooth and creamy consistency.

      Incorporate Add-ins: Gently fold in the chopped dates and pistachios into the yogurt mixture, making sure to distribute them evenly throughout.

        Shape the Coins: Line a baking sheet with parchment paper. Using a tablespoon or a small ice cream scoop, dollop the yogurt mixture onto the parchment, forming coins about 1 inch in diameter. Each dollop should be spaced about 2 inches apart.

          Freeze: Place the baking sheet in the freezer and allow the yogurt coins to freeze for at least 4–6 hours, or until solid.

            Store and Serve: Once frozen, carefully remove the pistachio date coins from the parchment paper. Store them in an airtight container in the freezer for up to 2 months. Serve them directly from the freezer as a refreshing and healthy treat!
