4 ripe peaches, pitted and diced

1 tablespoon honey (or maple syrup)

1 teaspoon cinnamon

2 cups Greek yogurt (vanilla or plain)

1 teaspoon vanilla extract

1 cup granola (your choice, preferably with nuts and seeds)

1/4 cup almond slivers or chopped walnuts (for added crunch)

Fresh mint leaves (for garnish)

Prepare the Peaches: In a medium bowl, combine the diced peaches with honey (or maple syrup) and cinnamon. Toss until peaches are well coated. Set aside to let the flavors meld for about 10 minutes.

    Mix the Yogurt: In another bowl, combine the Greek yogurt with vanilla extract. Stir until well mixed and creamy.

      Assemble the Cups: Take small serving cups or ramekins and begin layering. Start with a base of yogurt, followed by a generous scoop of the cinnamon peaches.

        Add Granola Layers: Next, sprinkle a layer of granola over the peaches, followed by another layer of yogurt. Repeat the layering process until you reach the top of the cups, finishing with a final layer of yogurt.

            Chill: Place the cups in the freezer for at least 2 hours for a light freeze, or up to 4 hours for a firmer texture.
