2 cups fresh ripe peaches, peeled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 cups vanilla Greek yogurt

1 cup granola (preferably with oats and nuts)

1 teaspoon ground cinnamon

Pinch of salt

1/4 cup almond or coconut flakes (optional, for added texture)

Cooking spray or parchment paper for lining

Prepare the peaches: In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, and vanilla extract. Toss until well combined and let this mix sit for about 10-15 minutes to allow the juices to release.

    Make the yogurt mixture: In another bowl, place the vanilla Greek yogurt. Add a pinch of salt and ground cinnamon to the yogurt to enhance the flavor, mixing well until smooth.

      Set up your molds: If using silicone molds or muffin tins, spray them lightly with cooking spray or line them with parchment paper to make removal easier.

        Layer the ingredients:

          - Start by adding a spoonful of the yogurt mixture to the bottom of each mold, smoothing it out evenly.

            - Next, add a layer of the peach mixture, spreading them gently over the yogurt.

              - Follow this with a layer of granola and almond or coconut flakes, if using. Press down lightly to keep the granola from floating.

                Repeat the layers: Continue layering with the yogurt, then peaches, and more granola until the molds are filled to the top, finishing with the yogurt layer.

                  Freeze: Place the filled molds in the freezer for at least 4-6 hours, or until totally frozen through.
