Achieving the right consistency in your Frozen Yogurt Oatmeal Raisin Clusters starts with proper whisking techniques. Begin by whisking your Greek yogurt vigorously until it becomes creamy and smooth. Using a whisk or an electric mixer can make this task easier. Incorporating air into the yogurt not only enhances its texture but also helps in creating a light and fluffy mixture that will hold together well once frozen.

Ingredients

2 cups rolled oats

1 cup Greek yogurt (vanilla or plain)

1/2 cup honey or maple syrup

1/2 cup raisins

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans work well)

1 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, raisins, chopped nuts, cinnamon, and salt. Mix until evenly incorporated.

Add Wet Ingredients: In another bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.

Combine: Pour the yogurt mixture over the dry ingredients. Stir well until all the oats and raisins are thoroughly coated with the yogurt mixture.

Form the Clusters: Using a tablespoon or small ice cream scoop, portion out the mixture and form clusters on a baking sheet lined with parchment paper. Press down slightly to help them hold their shape.

Add Chocolate Chips: If using, sprinkle a few mini chocolate chips on top of each cluster before freezing.

Freeze: Place the baking sheet in the freezer for about 2-3 hours, or until the clusters are completely frozen.

Store and Enjoy: Once frozen, transfer the clusters to an airtight container or freezer bag for easy snacking. Enjoy them straight from the freezer for a refreshing treat!
