Frozen Yogurt Maple Banana Bars

2 ripe bananas, mashed

2 cups Greek yogurt (plain or vanilla)

1/4 cup pure maple syrup

1 tsp vanilla extract

1/4 cup chopped walnuts (optional)

1/4 cup mini chocolate chips (optional)

1/2 tsp cinnamon

1/4 cup granola for topping (optional)

Pinch of salt

Instructions
 

In a large mixing bowl, combine the mashed bananas, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and creamy.

    Add in the cinnamon and mix well. If you’re using walnuts and mini chocolate chips, fold them into the mixture until evenly distributed.

      Line an 8x8 inch (or similar size) baking pan with parchment paper, leaving some overhang to make it easier to pull out the bars later.

        Pour the yogurt mixture into the prepared baking pan and spread it evenly with a spatula.

          If desired, sprinkle granola on top of the yogurt mixture for an extra crunch.

            Cover the pan with plastic wrap or a lid and place it in the freezer for about 4-6 hours, or until the bars are completely frozen.

              Once frozen, remove the pan from the freezer. Use the parchment paper overhang to lift the block of yogurt out of the pan.

                Cut into bars, and serve immediately or store in an airtight container in the freezer for future enjoyment.

                  For a more decadent treat, drizzle with extra maple syrup just before serving.
