Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1 ½ cups lemon-flavored Greek yogurt

1 (14 oz) can sweetened condensed milk

1/4 cup fresh lemon juice (about 2-3 lemons)

1 tablespoon lemon zest

1 teaspoon vanilla extract

Whipped cream, for topping (optional)

Fresh lemon slices, for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand. Press this mixture evenly into the bottom of a greased 8x8 inch baking dish. Use the back of a measuring cup or your fingers to firmly pack it down.

Mix the Filling: In a large mixing bowl, whisk together the lemon-flavored Greek yogurt, sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract. Mix until fully combined and smooth.

Assemble the Squares: Pour the lemon yogurt mixture over the prepared crust, spreading it evenly with a spatula.

Freeze: Cover the baking dish with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until set and firm.

Cut into Squares: Once fully frozen, remove the baking dish from the freezer. Let it sit at room temperature for about 5-10 minutes to soften slightly, which will make cutting easier. Use a sharp knife to cut into squares.

Serve: Serve squares topped with a dollop of whipped cream and a slice of fresh lemon, if desired.
