Ingredients

1 cup plain Greek yogurt

1/2 cup fresh lemon juice (about 3-4 lemons)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1 tsp vanilla extract

Zest of 1 lemon

1 cup graham cracker crumbs

4 tbsp unsalted butter, melted

Pinch of salt

Fresh mint leaves (for garnish)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are well-coated. Press the mixture firmly into the bottom of a silicone coin-shaped mold or mini muffin tin. Ensure the crust is even and compact. Place in the freezer while preparing the filling.

Make the Yogurt Filling: In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, honey (or maple syrup), vanilla extract, and lemon zest. Whisk until smooth and creamy. Taste the mixture and adjust sweetness if necessary.

Assemble the Coins: Remove the crust from the freezer. Spoon the yogurt filling evenly over each crust, filling to nearly the top. Use the back of a spoon or a spatula to smooth the surface if needed.

Freeze: Carefully place the silicone mold or muffin tin back in the freezer. Freeze for at least 4-6 hours, or until the coins are completely firm.

Serve: Once frozen, gently pop the coins out of the mold. Arrange on a serving platter and garnish with fresh mint leaves.

Enjoy: Serve immediately for a refreshing treat, or store leftovers in an airtight container in the freezer for up to one week.
