Ingredients

2 cups Greek yogurt (plain or flavored)

1 cup granola (your choice, preferably low-sugar)

1/2 cup fresh berries (blueberries, raspberries, or sliced strawberries)

1/4 cup honey or maple syrup

1/4 cup nut butter (almond or peanut butter)

1/4 tsp vanilla extract

1/4 tsp cinnamon (optional)

12 silicone muffin cups or a muffin tin

Instructions

Prepare the Muffin Cups: If using a muffin tin, line it with muffin liners. If using silicone muffin cups, set them aside on a baking tray for easy transport.

Make the Base Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), nut butter, vanilla extract, and cinnamon. Stir until smooth and well incorporated.

Layer Granola & Berries: Place a teaspoon of granola at the bottom of each muffin cup. Add a layer of the yogurt mixture over the granola, filling about 2/3 of each cup.

Add More Granola & Berries: Add another sprinkle of granola on top of the yogurt layer followed by a few fresh berries. You can press the berries slightly into the yogurt for added flavor in every bite.

Freeze the Cups: Carefully transfer the tray to the freezer and freeze for at least 4 hours or until completely solid.

Serve: Once frozen, take the granola cups out of the freezer and let them sit for a few minutes to soften slightly before carefully removing them from the cups. Enjoy as a refreshing snack or dessert!

Storage: Store any leftovers in an airtight container in the freezer for up to a month.
