1 cup rolled oats

½ cup almond flour

¼ cup maple syrup

⅓ cup coconut oil, melted

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

For the Yogurt Layer:

2 cups Greek yogurt (plain or vanilla)

½ cup cherries, pitted and chopped (fresh or frozen, if using frozen, thawed)

2 tablespoons honey or agave syrup (adjust based on yogurt sweetness)

1 teaspoon lemon juice

½ teaspoon vanilla extract

For the Topping:

½ cup granola (your choice)

¼ cup sliced almonds or walnuts (optional)

Instructions
 

Prepare the Base:

    - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.

      - In a mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt. Mix until a crumbly dough forms.

        - Press the mixture firmly into the bottom of the prepared baking dish. Bake for about 15-20 minutes or until lightly golden. Let it cool completely in the pan.

          Make the Yogurt Layer:

            - In a separate bowl, whisk together the Greek yogurt, chopped cherries, honey (or agave syrup), lemon juice, and vanilla extract until well combined.

              Assemble the Squares:

                - Once the base is cooled, spread the yogurt layer evenly over the baked oat mixture.

                  - Top with granola and sliced almonds or walnuts if desired.

                    Freeze:

                      - Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until firm.

                        Slice and Serve:

                          - Once fully frozen, remove the squares from the dish using the parchment paper. Cut into desired-sized squares.

                            - Let sit at room temperature for a few minutes before serving to make cutting easier.

                              Store:

                                - Place any leftover squares in an airtight container in the freezer. They can last for up to two weeks.
