Frozen Yogurt Blueberry Toast Cups

4 slices of whole-grain bread

1 cup vanilla Greek yogurt

1 cup fresh blueberries (plus extra for garnish)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 teaspoon cinnamon

Pinch of salt

1/4 cup granola (for added crunch)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Toast Cups: Preheat your oven to 350°F (175°C). Using a rolling pin, flatten each slice of bread until it’s about 1/4 inch thick. Cut each slice into four squares.

    Mold the Cups: Press each bread square into a greased muffin tin, ensuring the sides are well supported and forming a cup shape. Bake in the preheated oven for about 10-12 minutes or until golden brown and crispy. Remove from the oven and let cool completely.

      Make the Yogurt Filling: In a medium bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, cinnamon, and a pinch of salt. Stir gently until well mixed.

        Add Blueberries: Fold in the fresh blueberries, reserving a few for topping.

          Assemble the Cups: Once the toast cups are cool, spoon the yogurt mixture into each cup until they are generously filled.

            Chill: Place the filled cups in the freezer for about 30 minutes to firm up slightly.

              Garnish and Serve: After chilling, remove from the freezer and top each cup with a sprinkle of granola, a few extra blueberries, and a mint leaf if desired. Serve immediately for a refreshing treat!
