Frozen Yogurt Bark with Berries

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon pure vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup unsweetened shredded coconut (optional)

2 tablespoons chopped nuts (almonds or walnuts, optional)

A pinch of sea salt

Instructions
 

Prepare the Yogurt Base: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir well until the mixture is smooth and uniform.

    Line the Baking Sheet: Line a baking sheet or shallow pan (about 9x13 inches) with parchment paper. This will make removing the frozen bark easier later.

      Spread the Yogurt: Pour the yogurt mixture onto the lined baking sheet. Use a spatula to spread it evenly to about 1/2 inch thick.

        Add Berries and Toppings: Scatter the mixed berries evenly over the yogurt. If using, sprinkle the shredded coconut and chopped nuts on top as well, pressing them down gently into the yogurt.

          Freeze: Place the baking sheet in the freezer and freeze for about 4 to 6 hours, or until the yogurt is completely firm.

            Break into Pieces: Once fully frozen, remove the baking sheet from the freezer. Lift the yogurt bark out of the pan using the parchment paper. Break it into pieces of your desired size.

              Serve and Enjoy: Serve immediately or store the yogurt bark pieces in an airtight container in the freezer for up to a month. Enjoy this refreshing snack any time!
