1 1/2 cups Greek yogurt (plain or vanilla-flavored)

1/2 teaspoon vanilla extract

1 cup granola (your choice of flavor)

Prepare the Apples: In a large bowl, mix the diced apples with lemon juice, ground cinnamon, nutmeg, brown sugar, and a pinch of salt. Stir until the apples are well coated. Let them sit for about 10 minutes to allow the flavors to meld.
