2 cups plain Greek yogurt

1 cup pitted medjool dates, packed tightly

1 cup almonds, roasted and chopped

1/2 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1/4 tsp salt

1/2 cup unsweetened shredded coconut (optional for garnish)

1/4 cup chocolate chips (optional for drizzle)

Prepare the Base: In a food processor, combine the pitted medjool dates and chopped almonds. Pulse until the mixture resembles a sticky crumb texture. It should hold together when pressed between your fingers. If needed, add a teaspoon of water to help it combine.

    Press into a Mold: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the date and almond mixture evenly into the bottom of the dish. Use a spatula or your fingers to pack it tightly.

      Make the Yogurt Layer: In a bowl, mix the Greek yogurt with honey (or maple syrup), vanilla extract, and salt until well combined. Taste and adjust sweetness if necessary.
