Ingredients

4 cups of seedless watermelon, cubed and frozen

1/4 cup of fresh lime juice (about 2-3 limes)

1 tablespoon of lime zest

2 tablespoons of honey or agave syrup (optional, depending on sweetness preference)

1/2 cup of coconut water or regular water (adjust for desired consistency)

Fresh mint leaves for garnish (optional)

Lime wedges for serving (optional)

Instructions

Prepare the Watermelon: Start by cutting fresh watermelon into cubes, spreading them out on a baking sheet, and placing them in the freezer for at least 4 hours or until completely frozen. If you prefer, you can freeze the watermelon overnight.

Juice the Limes: While the watermelon is freezing, juice the fresh limes to obtain 1/4 cup of lime juice. Also, zests the limes to get about 1 tablespoon of lime zest for added flavor.

Blend the Ingredients: Once your watermelon is frozen, combine the frozen watermelon cubes, fresh lime juice, lime zest, honey (if using), and coconut water in a high-speed blender.

Blend Until Smooth: Blend on high until all ingredients are well-combined and slushy in texture. If the mixture is too thick, add more coconut water or regular water, a tablespoon at a time until you reach your desired consistency.

Taste and Adjust: Taste the slush and adjust sweetness as necessary by adding more honey or agave syrup. Blend again to combine.

Serve Immediately: Pour the slush into chilled glasses, and garnish with fresh mint leaves and lime wedges if desired. Enjoy your refreshing summer treat!
