2 cups fresh strawberries, hulled and diced

1/2 cup granulated sugar

1 cup heavy cream

1 cup Greek yogurt (plain or vanilla)

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

Prepare the Strawberries: In a mixing bowl, combine the diced strawberries and granulated sugar. Toss to coat the strawberries evenly with sugar. Let it sit for about 10 minutes until the strawberries release their juices.

    Blend the Cream Base: In a large mixing bowl, whisk together the heavy cream, Greek yogurt, fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt. Continue whisking until the mixture is smooth and slightly thickened.

      Mix Strawberries with Cream Base: Gently fold the macerated strawberries (with their juices) into the lemon cream mixture. Make sure the strawberries are evenly distributed throughout the mixture.

        Transfer to Molds: Pour the mixture into silicone molds or ice cube trays. Leave a little space at the top, as the mixture may expand while freezing.

          Insert Sticks: If using molds designed for popsicles, insert sticks into the center. If using ice cube trays, allow the drops to freeze without sticks.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely firm.

              Unmold and Serve: Once frozen, remove the cream drops from the molds. If they are a bit stubborn, run the bottom of the molds under warm water for a few seconds to loosen them. Serve immediately and enjoy the refreshing taste!
