2 cups fresh strawberries, hulled and sliced

1 cup coconut milk (canned for creamier texture or carton for lighter version)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup shredded coconut (unsweetened for a healthier option)

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions
 

Blend the Strawberries: In a blender or food processor, combine the sliced strawberries and 1 tablespoon of honey (or maple syrup). Blend until smooth. If you prefer some texture, reserve a few strawberry slices to mix in later.

    Prepare the Coconut Mixture: In a separate bowl, whisk together the coconut milk, remaining honey (or maple syrup), vanilla extract, shredded coconut, and a pinch of salt until well combined.

      Layer the Pops: In your popsicle molds, add a couple of tablespoons of the blended strawberry mixture. Follow with a layer of the coconut mixture, and then alternate layers until the molds are full.

        Insert Sticks: If your popsicle molds come with sticks, insert them gently into the center of each mold. If not, freeze for about 1 hour, and then insert wooden sticks or any other appropriate handles once partially frozen.

          Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours or until completely solid.

            Unmold and Serve: To remove the pops, run the molds under warm water for a few seconds. Carefully pull out each pop and garnish with fresh mint leaves if desired.

              Enjoy: Serve immediately as a refreshing treat or store in a zip-top bag in the freezer for up to 2 weeks.
